It’s often said about the Pothoharis that our hearts are always full of love and the kitchen is always full of food. Whether it’s a friend or a stranger we never let them leave without having something, even if it’s just a cup of Chaa. Our food is a mark of our identity and our culture.

These culinary traditions continue to survive when we keep sharing. We revisit some of our traditional recipes which have been carefully preserved by our community. 

Reflecting on Pothohari traditions of cooking, it is distinct for its homelike flavour and natural colours. The rich mix of dishes draws on influences from the worlds of Mongolia, Persia, Arabia, China and Greece. The subtle technique of mixing herbs, spices with unique procedures is what defines the cuisine. The food thus reflects not only an ancient culinary methodology, but hundreds of years of the people’s lifestyle and culture.
